     Garnished with natty sprigs of chervil, the cervelas was almost deceptively angelic, with buttery notes of pistachio balanced by small chunks of black truffle, which landed on the palate like tiny earthy comets.

Borrowed from Italian cervellato, from cervellata, adaptation of Old Milanese Lombard zervelada, derived from Latin cerebellum (“brain”), whence also French cerveau.
